How about lettuce?  It matures fast, it will love the nitrogen fix, and
growing it along the back row of the bed will mitigate some of the
summer sun.  (You'll have to assess this.  I don't know how hot it gets
in SLC.)  You'll have to start the seeds yourself, though, because the
nurseries don't carry lettuce seedlings during the summer.
