When to pick corn


I know that corn is ready when you poke a kernel with a fingernail and
you get a milky, not clear, substance  but some of my corn has immature
kernels on the top couple of inches and the rest, below that, are
'ready'. Should I wait to pick or are these just underpollinated kernels
that will never fill our?

Also, I have heard on one of the lists (can't remember which one) that
someone freezes their corn in the husk. Does anyone know anything about
this-how to freeze and how to cook later?
