Based on advice earlier this spring, I kept mulching mine until they
flowered. At about the same time I started poking around to see if there
were any potatoes, and there were. It seems like they come a lot quicker
with mulching them rather than keeping them covered with soil. They're good
to eat as soon as they're potatoes. The little ones (new potatoes) are
great cooked whole with green beans. I assume they keep growing as long as
the top is alive, so the longer you wait the bigger they'll be. I try to
plant enough that I can eat the little ones and still have plenty of big
ones later. I've already harvested several plants, with potatoes ranging in
size from BB's to tennis balls.
