This has more to do with the grow habit. Tomatoes are trellised, which
is definitely not a natural method, because the tomato is a creeping
plant. If you have ever seen tomatoes grow on good (and not dry) ground,
(as in Italy), you can see that the plants form roots on nearly any point
on the ground. Trellising is done to keep the fruit proper and dry, which
is necessary if you sell the whole fruit, and not if you make sugo or pelati.

So transplanting tomatoes for trellising deeper is in fact a good technique
to improve the root mass of this trellised crop, and necessary to have a
good harvest.
