If you get potatoes at a farmer's market and they are called organic, are these
also pretreated to prevent sprouting?

Yes, lost/left over potatoes will grow and produce more potatoes, but
they will be much smaller than the ones you planted because they were
treated to prevent sprouting which inhibits growth. I used the potato
recycling method until two years ago. Seed potatoes are worth the money.
The plants are bigger, stronger, and the yeild/ potato size is greater.
They are variety specific...Look for *Yukon Gold* seed potatoes. They are
butter flavored white potatoes which will produce two crops in one growing
season in zone 5. The best seed potato for new red potatoes is *Pontiac Red*.
