Lettuces and spinach are different. The "rule of thumb" for greens in my
Tucson AZ garden is 4 to a square. This assumes I'll be picking the leaves
as I go (instead of harvesting the whole plant). I use this for lettuce,
mustard, amaranth, and even collard and kale even though those will occupy
a whole square if you let them.
Spinach is 9 to a square.
If in doubt you can always plant close and thin when they seem to be
crowding each other out. Lettuce is more foregiving of overcrowding than
some crops.
