..........You are correct. Transplants grow from seed. Sets grow from
transplants (or from seed if you wait longer)

.........Maturity in onions is a matter of definition. They can be eaten
at any stage. Pull some for green onions. Leave the rest and harvest them
at the end of the season, regardless of size. They will all be usable.
