Onion transplants/sets

Is there a difference between onion transplants and onion sets? My
reading of the book leads me to thing that transplants are younger
thant sets and that sets actually have a bulb to them.
So given that perhaps flawed interpretation, my question is this: two
days ago I bough a pot full of spanish yellow onion transplants. They
are all bunched together and I just pulled apart the individual plants.
I planted them according to the book in two squares (32 plants) and
still have, oh I don't know, maybe a gazillion little plants leftover.
Since we're only a two person household and have no foreseeable use for
a gazillion onions, I was wondering if I could plant them and stop them
at the "set" stage to save for next year?
Also, having started them at this younger stage, will they have enough
time to mature this season? (planted May 7 in zone 5 (Central Illinois)
for what that's worth).
