Hey Wendy & co. My only reservation on the following "rule of thumb" would be that I would hesitate to boil spinach for more than a minute. Fia -- Sophia Hansen fia@netcentral.net All greens should be treated in the same manner. Pick young, tender green leaves. Wash thoroughly and cut off woody stems. Scald 2 minutes and avoid matting of leaves. Cool and drain. Chop or leave whole. Pack in "can or freeze jars" or plastic freezers boxes. Seal, label, and freeze. ---------------------------------------------- According to the book these instructions apply to all greens so I suppose that includes arugula.
