Re: SQFT Spinach - how to store?

My only reservation on the following "rule of thumb" would be that I would
hesitate to boil spinach for more than a minute.

All greens should be treated in the same manner.
Pick young, tender green leaves.
Wash thoroughly and cut off woody stems.
Scald 2 minutes and avoid matting of leaves.
Cool and drain.
Chop or leave whole.
Pack in "can or freeze jars" or plastic freezers boxes.
Seal, label, and freeze.

According to the book these instructions apply to all greens so I suppose
that includes arugula.
