Cilantro-use it in salsa. Major flavor ingredient for the southwest's
favorite condiment.
If I had to pick just one for overall usefulness, try basil. Others like
dill have short usage period but uou can use basil freh or dried in a
variety of dishes. I would also suggest that you get some Italian parsley.
This is a bienniel (sp? VBG). So many uses.
