According to an article that Mel wrote a while back for OG Magazine, you dig
out one square to a depth of one foot with straight sides. Reserve the soil
that you removed and amend with your best compost. Losen the soil in the
bottom of the hole with a spading fork, then plant one seed potato in the
bottom of the hole and add enough of the amended soil to just cover it. As the
potato grows keep adding the amended soil to cover until you have filled in
the hole. The potato will grow new spuds all along the buried stem. Kinda like
vertical growing underground :-)
