Our favorite way to enjoy kale is to saute garlic in a little oil, add
roughly chopped kale, a splash of soy sauce and lemon juice and saute until
cooked to your preference. We sometimes add cubes of tofu browned in oil
and a little soy sauce and serve it with rice.
Another favorite is potato and greens soup, cook 3 cups cubed potatos in 4
cups water with a few crushed cloves garlic for 15 minutes, then add 2 cups
chopped kale and salt to taste. Cook another 10-15 minutes and add a splash
of olive oil and cubes of crusty bread just before serving. Add pepper to
taste.
