Hi there from a lurker...
About that celery, have you considered growing the herb, lovage? It tastes
and smells very much like celery. I have some that grows in one of my
flower beds, and it comes back year after year. I never buy celery anymore
except in winter...I've never tried drying lovage, so don't know how that
would fare. Whenever I need celery for something, I just wander out the
door and pluck a few leaves from the lovage plant. The flavor is much
more concentrated than celery, so you won't want to use equivalent amounts.
