Peg- I fix fried green tomatoes very often for hubby and me (even just last
night).    In my experience, canning them does make them mushy and isn't
suitable to fry whole as normal but you could use them to get more of a
scrambled effect.  Prepare them the same way (much less oil); tastes the
same!  Absolutely delicious!!!
