First of all, what a nice looking seedling !!!

As for your camera question, what you're doing by over exposing your 
film is increasing color saturation which creates much more contrast.  
I've seen many of your photos in the past and guessed that you were 
doing exactly that.

You can always take photos in the evening when the lighting conditions 
provide more natural contrast due to the angle of the light source.
