I agree that the option to stop down the camera aperature is
important. Though you may not always want to use the option.
It will bring the background into focus. Sometimes that enhances
a picture and sometimes it distracts from the flower. The nice thing
about manual controls and good optics it that they give you artistic
choices.

I started getting into flower (most iris) photography this spring and
was amazed to find out how windy my yard is. Much of the time
a tripod was usless because the flowers were shaking more than
I was. Oh well...
