My experience:
Apparently seed mature before the pod turns white. I've not determined just
how long before the turning, but my guess is that it's several days. I've
not been willing to sacrifice seed to find out. My guess is about five weeks
after crossing, maybe six, but this is just from my observations during one
of those slimy summers.
Once pods get to a mature stage, white or further, you can cut most or all of
the stalk off, making sure you keep the tags intact, without sacrificing seed
quality. Usually, they will mature anywhere air can circulate. A sunny
window sill is ideal.
In a normal year, mine stay in the beds (was fields) until ready to crack. I
check them twice daily. However, if I'm going to be away during the drying
and cracking stage, I will cut the pods before I leave, place in a safe place
with identification, and let the pods cure while I'm away.
During a really humid summer/spell extra care may be taken to keep the pods
from rotting. One especially rainy summer, I had to rinse the nasty pod off
the mature seed to harvest, and they still sprouted the next spring. Most of
my pods didn't make it to the brown stage that year.
