Your seed pods will start to turn brown and eventually crack. That is
the time to do the harvest. If you don't catch the pods early after
cracking, you will probably have to pick up some seeds from the ground.
Where I am located in No. Calif, my seedpods start forming in May. I
don't expect to harvest the seed pods until late July and maybe some in
Aug.
