We wait until they just start to split open on top, then harvest. Be
carefull not to let them go too long or you will lose seed.

I have seen ants do this before, and only on pods that were relatively close
to the ground. They usually destroy the seeds in the section of the hole
but the other two sections usually are fine. There is also a borrowing type
of bug that I haven't been able to indentify that will burrow and coccoon
inside the seed pod. Most of the seeds will be fine in this case unless the
pods starts to mold and rot.
