To those who loved the St. Louis specialty "gooey
Butter Cake" served in Skaggs garden, Judy Skaggs
sends this note: Bob's parents always took him to
the bakery every Saturday AM to pick out his
favorite thing and he called it "Goofy Butter
Cake" and has always loved it.  Glad the visitors
enjoyed it!  
Gooey Butter Coffee Cake
 
Donbt count the calories in this St. Louis
favorite.
 
1 (16-ounce) box pound cake mix  (I have also used
the yellow butter cake mix) 4 eggs, divided B=
half cup butter, melted
 
1 (16-ounce) box confection sugar
1 (8-ounce) package cream cheese, softened
1 B= tablespoons vanilla extract
 
Preheat oven at 300 degrees.  Combine cake mix, 2
eggs, and the butter.  Pour into a well-greased
8x12 pan. Reserve two tablespoons of sugar.
Combine cream cheese, vanilla, remaining eggs and
sugar; mix well.  Spread over batter.  Bake 15
minutes.
 
Remove from the oven; sprinkle reserved sugar on
top.  Return to the oven; continue to bake for 25
minutes.  Serve warm or cool on a rack.  Serves 10
b 12.
