Jean,

Probably the best time to transplant your iris would be in July or early
August. Dig the entire "bunch" and separate them.  Once dug you will see
how easy it is to separate.  Throw away the ones that have bloomed in
prior years as these will not bloom again.  Keep the ones that have nice
green fans and cut the fans back halfway.  This compensates for the loss
of roots which will be broken when you dig.  Let them rest for a couple
of days in a shady place so the cuts and wounds can heal.

If you are planting them where iris were not grown before and the soil
is fairly fertile then no amendments are necessary.  Be sure there is
adequate drainage.  Bearded iris do not like wet feet.  If your soil
needs amendments then I would suggest trying your chicken manure.  Make
sure its aged!         

Mulching is not advised.  Fertilize next spring using a well balanced
fertilizer at half strength.
