If your thistles are persistent in the same general area, they are probably
Canada thistles. Unlike most thistles, which are biennial and grow singly
on their own roots, Canada thistles are true perennials and spread by
underground stolons (like bindweed, another hard-to-control weed). For the
sake of the good name of our Canadian friends, the term "Canada thistle" is
a misnomer; it is really a native of Europe. 

No pokeweeds here, thank goodness. The nearest equivalent (rampant growth,
impossible to uproot once it takes hold, even edible - the roots, not the
leaves) is burdock. Not poisonous, but it has all those pesky burs that
stick to everything - you do not want to let your dog get into a patch of
it!
