As far as I have experience neither rabbits nor sheep will eat rosemary - I have always assumed as a result of the spiny leaves and the oils therein. Both animals however taste very good cooked with the prunings of your hedge! I would reckon on a life of 5 - 10 years for a rosemary hedge before it needs replanting due to the base becoming too woody. As to varieties we don't have the choice here in Portugal to suggest anything specific. I do however think that they look wonderful all year and especially when in bloom.
