No, you shouldn't need to water Acanthus - they can safely go summer dormant, let them die down and clean away all the dead stuff, regrowth will commence with autumn rains - not much help if you get heavy snows!
I have one called Acanthus alexandri carollii (probably a corrupted spelling) that seems a diminutive form of spinosus.
