Local olive oils are available in Perth, I have seen some from Olive
Farm and also from the Benedictine Monastery at New Norcia - not
cheap of course - and I think there are more. I remember seeing a
feature (newspaper or TV) on olives in the Adelaide Hills - they
were, as mentioned by John, planted ages ago and then left to go
wild, regarded as weeds. Recently, with all the emphasis on
olive oil in Mediterranean etc. cuisine - and for health (Extra
Virgin Cold Pressed only, of course :-) ) some people have been
reclaiming the trees and getting into oil production. It would
seem a natural industry for Australia, especially if they can
get the price down.
