Great topic! I drove through Lindsay, California a few months back, home
of the Lindsay Olive Company. We stopped at a farm store and bought the
most delicious sun dried olives! I am not a huge olive fan but those
olives were wonderful! If only I could find them in my area....
I am giving a talk on "Bounty from the kitchen garden" at a garden show
next month and plan to hand out recipes. As I brainstormed my favorite
recipes for backyard produce, I realized that 99% of them are mediterranean
-- Baba Ganouj made from roasted eggplant, tabouli made with bulgar,
tomato, mint and parsley (I throw in some cucumber as well), eggplant and
zucchini grilled with olive oil and fresh herbs, Israeli salad (chopped
cuke, tomato, onion olive oil and lemon), and etc. There are a few Russian
specialties in there as well, an eggplant/dill pate and my grandmother's
wonderful dill pickles!
When I traveled to Israel as a teenager, I as was amazed to find that the
Israelis eat pickling cucumbers, tomatoes, cheese and yogurt for breakfast.
Now I realize what a wonderful way that is to start the day adn so much
smarter than eating sugar-laden breakfast cereals!
