Hi Julie

Strangely enough we do not grow a Meyer Lemon. I understand its a cross
which will stand colder weather than we have. We have two enormous ancient
Lemon trees which crop throughout the year. Here modern cultivars for
commercial use, crop all at once in the spring. Give me the older cultivars
any day!

Your talk of garden birds makes me a little homesick for England where we
fed the birds in the winter and they became quite tame. Here a) there is no
need to feed them as they can find food all the year round, and b) over the
centuries they have been shot, either for food or sport so tend to be shy.
Barbaric I know, but I cannot change deep rooted Greek habits. So a glimpse
of a Black Cap, Blackbird or Wren is about all I manage. However we are on
the Swallows migrating route and they gather in their thousands in September
to cross over to Africa. An amazing sight. They flock much the same as
Starlings(I well remember the thread on Starlings )

Lemon Curd

3 free range eggs (mine are usually medium to large)
150gms Butter
5 Lemons - grated rind of 2 and juice of the rest. (the original recipe
calls for 3, but I like my Curd to be LEMONY! )
325 grms Pale raw brown sugar.

Beat the eggs then put all the ingredients in a thick bottomed pan. . Stir
until the sugar is disolved then heat VERY SLOWLY until the curd thickens
enough to coat the back of a wooden spoon. pour into hot sterilised jars and
seal. The official recipe calls for a double saucepan, because you must not
let the mixture actually boil or it will curdle, but I have a really good
thick bottomed pan and am used to making egg custards for ice cream so I
risk it on direct heat. It just depends how confident you are.

This keep about 6 months, but I cannot believe you will have it that long.
Enjoy.
