Ellly,
I know that banana flowers are used in Indian and Bangladeshi
cooking. When I was in Bangladesh some years ago, a friend of a
friend made a delicious dish with it for me. The large flowers, as I'm sure
you know, have many, many tightly furled petals. They are sliced
crosswise like Napa cabbage and then cooked. I'll look in some of my
south asian cookbooks for a recipe.
Two other edible flower asides:
My boyfriend, who grew up in Poland, says that his family gathered
robinia flowers (they called them acacia but he's showed me the trees
and they are definitely robinia) and ate them raw in salads.
And, when I lived in Denmark we drank a refreshing non-alcoholic drink made
from elderberry flowers.
