Another comment on elderberry flowers: adding fresh elderberry flowers to
champagne, and letting them ferment a few days, turns into wonderful bubbly,
delicious elderflower champagne. Elderberry flowers are also used to add
flavor to gooseberry ice cream (home made of course) and elderberry flowers,
dried, are a prime ingredient in a wonderful sauce for salmon.
