eradicating alstromeria?

Seven years ago I foolishly planted an Alstromeria 'Third Harmonic' in my garden. It as a scary cultivar, vigorous to a fault. I never water it, but it is now 7' across. Not much soil left there, just a thick mat of Alstromeria tubers. Some say that I should just forget about having a garden and go into cut flower production! I agree that it is a very pretty flower, but really, it has to go. Some say that if I just dig it out down to 2 feet, I will be OK. Yet, I hear scary stories from when the UC Botanical garden tried to eradicate Alstromeria Hill. It it still coming up in the Chinese herb garden that was supposed to take its place.
Any advice appreciated (but Round-Up is not an option).
