I know it's not by color, because oranges grown in the tropics don't always 
turn orange.  A perfectly ripe orange might be green, for example.  I favor 
the "destructive sampling" technique, although this is not always foolproof.  
All the fruits on a tree don't ripen at the same time.  This is particularly 
true of those fruits that require long periods of time or hot weather to 
sweeten up:  valencia oranges, grapefruits, tangelos, etc.
