I very much doubt you are seeing seedlings bloom the first year in the garden
and be full sized plants the first year. New seedlings will appear exactly as
that... younger. I have had the doubles appear as well. Then revert to single. The
double white I have now blooms first flush in doubles, then second flush are in
singles.
Balloon flowers are very long lived. I understand the Japanese eat the roots
as a starchy veggie.... suppose if you get too many misbehaving they could end up
on the table at dinner.
