seed collection

For years, I have collected seeds from hollyhock, lupins, columbine,
poppies, etc.
This year, I had a 'volunteer' single hollyhock, which was exquisite. It
grew up from between the bricks on a pathway! I have been waiting and
watching for the seeds to be ripe, ready for saving.
I currently have a house guest who, in a misguided effort to neaten things
for me (it HAS been a tad tricky using the path), cut back the stalks before
I had had a chance to get the seeds.
Question: is there anything I can do to facilitate the ripening of the
seeds once the stalks have been cut?
Susan
