Put the plants in your contract or you could be liable later if new owners 
find some missing.  Chances are the buyers won't care at signing time.  When 
I moved we specified that the daylily, hosta, wildflower, and daffodil 
collection were not included in the sale.  The buyers just shrugged.  With 
all that we moved, however, it might have been ugly the next spring when they 
realized what we had taken if they had not already agreed to it.  I know many 
others who have specified parts of their gardens in their contracts.
