Amendments in new gardens


As some of you know, I'm moving house in a month and am taking divisions
and cuttings and basically anything I can get away from my old house to
the new (only 10 miles away).

Basically, my new yard is a *clean slate* pertaining to perennials and
bushes (nice mature trees, though).  We have ugly clay soil that needs
amendment and the grade needs to be fixed around the house.

My two questions are thus:  What are your favorite soil amendments and
what proportions?  

I am planning to have fill brought in to repair the grade (6 to 10 foot
slope from the foundation out to the yard, at a depth of 12 inches
sloping to current ground level, to prevent water from running into the
basement).  I've read somewhere that some people don't plant next to the
foundation, but leave a *cat walk* around the back to have access to the
rear of the gardens.  Should I put pavers or some-such thing on that
catwalk?  What would be asthetic, as well as functional?  My main concern
is maintaining the grade away from the house, as well as having my lovely
gardens back.

If this is off topic, and there's a *graders list* I apologize, and
please feel free to point me in that direction.
