What about Rudbeckia  nitida 'Herbstsonne?  My clump reaches well
over 5' in height - I think closer to 6', really...quite above my
head.  Very nice large yellow typical ray flowers with large green
cone in middish summer.  Is not 'full' like a grass, but quite a
lovely plant.  The yellow is  a clear bright - not orange yellow. 
Foliage is a good dark green.  Supposedly hardy from z 5-10.

Mine even blooms in only some late afternoon sun.  I have to stake
it, but I think that is because it is not growing in full sun, as it
would prefer.

Do not think this would appreciate being walked through, but in
conjunction with other things would provide height and interest.
