Karen,
Have this feeling what you have collected are the immature ovaries
and what was inside of them was the immature seed.
If you didn't take all of them, go put the nylons on the remaining
heads and give them a few weeks and then go check them again. Seed
has not ripened on my plants, yet, so I rather doubt it has ripened
on plants in your area...the ripening process takes a month or so
from fading of flower.
