Asparagus Fern, zone 7B

>Is there a way to overwinter asparagus fern for a zone 5 gardener? I
suspect
the tubers could be saved, but how?

I accidentally overwintered an asparagus fern outside last year. I picked
up a bag of plants yanked from the annual beds at my office park
entrance--they use a lot of fancy tender perennials now. Spread the "dead"
plants out in the garden, thinking they'd all rot to compost by spring.
Discovered one of the asparagus ferns, but only one of several, putting up
new growth this spring. I potted the plant and it's indoors for this
winter. Don't think I can count on it making it outside every year.
