wild grape vines

We found concord grapes growing wild on the slopes of the road above a corn
field we take walks on; they are not very strong in flavor although there is
no mistaking them, and their flesh is small in comparison to the pits; what
would happen if we planted some vines and took care of them? We're in NY
state, zone 5;
also, we are having a beautiful autumn here, and the colors this year are
breathtaking, with more reds than usual; does anyone know whether this is
because we had very little rain this summer?
