John,
Here at the Republic Pumpkin Daze Festival we have found that with more
categories you have more entrants. With more entrants you have more friends
and neighbors coming to the festival. With more friends and neighbors
coming to the festival you have a better chance of increasing sponsorship
for the next season. Also if one wants to claim any of the national prizes
for "minor interest vegetables" it must first be weighed at one of the
sanctioned sites.

Zach,
Why prizes for the minor interest vegetables?
My experience for the past two years is that awarding prizes for a few
non-pumpkin entrants slows down the whole affair. Last year the special
prize
for last place(to encourage entrants and make the contest more fun, I would
think) went to the second place tomato grower, who also got a ribbon for
second place.
Is the decision to have the other veggies set in stone?
John
