People (judges) can't figure out which class it belongs two if there are only two classes. Adding a third is just going to give them 50% more choices and that much more chance to screw it up. I'm like Paul, I grow the things to have fun and it really doesn't matter whether I win anything or not. I think weight is probably the most important attribute followed by color. I think a single class would probably be acceptable to most. If you have to have two classes. All green is squash, anything else is pumpkin.
Now for labeling seeds that becomes a different matter. It would be nice to have some sort of descriptive code that called the parent fruit a Pumpkin (all orange), a squash (all green) or something in the middle be that white, cream, gray or whatnot. It would make seed selection and following progeny lines a little easier.
As for me I'll continue to grow the seeds with best orange genes around and hopefully cross that with something with great size and end up with BIG and orange.
