Most bury the entire vine, but wait until the side vines start to run a bit, maybe about 6 to 12". Keep the soil moist to promote root growth.

Yes, there is a root node on the top and bottom of the vine at the leaf axil By the time you cover the vine with soil at the leaf axil, there is not much vine left anyway. Some just make a trench ahead of the vine and backfill as the vine grows along the trench. Burying the vine also help anchor them so they are less susceptible to wind dammage.
