the aquarium system sounds better than my lightbulb system water holds a
set temperature longer than air and it sounds like you can adjust your
temp. for that super hot/cold day so you don't cook or freeze that
young plant as for the humidity problem do you have your tank covered?
if so do you remove or open the cover for a few hours a day to vent some
of that moisture and maybe adding a fungicide to the soil mix will also
help anyway i think your system is a good idea it just needs a little
fine tuning i had a similar problem with hot pepper seeds because some
of them can take 30 days to sprout warm fertile moist soil even if it
has been sterilized still gets a fungus growth after that long but
usually dies after a few days of lower humidity and more sun
