How much manure?

I have access to an unlimited supply of well composted cow manure (I live
in a semi-rural area and am not afraid to ask) and I want to use as much
as is prudent to use. I have heard, however, that by using too much
manure you can run into problems with heavy metals building up in the
soil and causing a toxicity. Anybody know the answer to this one?
