Selected already? Yes, I bury on both sides...but don't forget about
vine stress.

I would prune the third vine if they showed before I pollenated. Yes, I
bury the
vines before the fruit is set. I do consider vine stress and a dry
growing condition
for my final location.

For the time when to switch is unknown for me. I would change the ratios
to focus on fruit growth.
