are you boiling your pumpkin? it can get diluted with the water. I cut my
pumpkin in half,scoop out the seeds, turn it face down in a pan with only
about 2tbsp. of water and bake or microwave till tender, then scoop out the
flesh from the shell. Mine is always quite orange.
