Hi Darren,
This is my first year growing Atlantic Giant pumpkins.  In the past when my children (now 7,6 & 4) and I grew Jack O Lanterns we learned a few things.  I believe they take 90-100 days to mature.  It is in the last month of growing that this variety of pumpkin changes from green to orange.  Maybe yours are just not old enough yet.  By Halloween they may have changed color for you. 
 
You may want to save a pumpkin or two for a project.  You could cut the top off and empty out the inside.  Put a small vase inside and fill it with water.  Then put flowers in it for your center piece for a special dinner or your teacher.
