Re: When is rhubarb ripe?


Sorry, I don't know.  I'm only familiar with true rhubarb.  I'd be wary of
other species since rhubarb itself is so close to poisonous, with the oxalic
acid in the leaf blade.  Other species might have oxalic acid or other toxic
substances in the stalks as well.
Now, before someone freaks over regular rhubarb, note that I said the poison
is in the leaf BLADE - that's the part you cut off and discard.  The STALKS
are safe.
