Propagation of vegetables from cuttings?

I have some eggplants and peppers which are still thriving in our zone 9
climate. Some of the peppers I can pot up and take onto the porch before we
get our short seasonal killing frost in January. But I would like to try
propagating some of them by cutting, if possible.
Also, my eggplants are enormous and I would like to try to keep some of
these plants going over the winter.
Has anyone attempted to root eggplants or peppers from cuttings? I do
tomatoes successfully all the time, but have not tried the former. If it
works, what is the best technique?
