[SG] Seeds

I am a newbie this year, so bear with me.  When is the proper time to
harvest seeds?  Are the centers of purple coneflowers, black-eyed susans,
shasta daisies, and blanket flower seeds to be harvested?  When should they
be harvested?  What do I do with them after that? As you can see, I don't
'no nuthing'  ;-)
